Sourced from the lush mountains of Ethiopia’s Guji region, this Abu Nura lot showcases the country’s celebrated natural processing technique.

Origin: Uraga, Guji, Ethiopia

The Brew

Whether you’re a barista, pilot, or coffee lover on the ground, Hawk is a joy to brew.

As a filter coffee, it reveals its fruity complexity — think strawberry and lemon zest with a crisp, refreshing sweetness.

As an espresso, it’s bright yet balanced, with a silky body and notes of ripe blackcurrant and citrus.

Barista tip: Use a 1:16 ratio (15g coffee to 240ml water) and brew at 94°C for filter, or pull your espresso at 19g in / 40g out in 28 seconds. Let it cool slightly before sipping — that’s when the Hawk really takes flight.
